  • 2 large chicken breasts, shredded
  • Salt and black pepper, to taste
  • 1 cucumber, diced
  • 1/2 pint cherry tomatoes, halved
  • 1/2 red onion, chopped
  • 1/2 cup kalamata olives
  • 3/4 cup low fat feta cheese
  • 1/2 cup plain Greek yogurt
  • 2 tbsp light mayonnaise
  • 2 tbsp red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning

Instructions

  1. Season chicken with salt, pepper, and a sprinkle of Italian seasoning. Cook using your preferred method (grill, bake, air fry, or pan-sear). Let cool, then shred or slice. You can also use rotisserie or pre-cooked chicken.
  2. Dice the cucumber, halve the cherry tomatoes, and chop the red onion.
  3. In a small bowl, whisk together Greek yogurt, light mayo, red wine vinegar, garlic powder, onion powder, and Italian seasoning until smooth.
  4. In a large bowl, combine the chicken, diced veggies, olives, and feta. Pour in the dressing and toss until evenly coated.
  5. Chill in the fridge for at least 15โ€“20 minutes to let the flavors meld before serving.
