These healthy cosmic brownie bites are a delicious no-bake snack thatโ€™s vegan, gluten-free, and refined sugar-free! Inspired by the classic Little Debbie cosmic brownies, this homemade version is packed with wholesome ingredients like Medjool dates, almonds, walnuts, and cocoa. These high-protein brownie bites are naturally sweetened and made in just 10 minutes. Perfect for kids and adults, they make a great healthy snack or quick energy boost.


Ingredients

  • 1 1/2 cups Medjool dates, packed
  • 1 cup almonds
  • 1 cup walnuts
  • 1/4 cup shredded coconut
  • 1/4 cup cocoa powder
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1โ€“2 tbsp maple syrup (only as needed)
  • 1/3 cup candy-coated chocolate chips

Instructions

  • Blend until a sticky dough forms. If the mixture is crumbly, add 1-2 tbsp maple syrup and blend again to improve texture and sweetness.
  • Transfer the brownie dough to a bowl. Stir in the candy-coated chocolate chips.
  • Using clean hands, scoop and roll the dough into bite-sized balls.
  • Enjoy immediately or store in an airtight container in the refrigerator.

Notes

  • If your dates are dry, soak them in warm water for 10 minutes before blending.
  • Substitute almonds and walnuts with cashews or pecans for a different flavor.
