- 1 1/2 cups Medjool dates, packed
- 1 cup almonds
- 1 cup walnuts
- 1/4 cup shredded coconut
- 1/4 cup cocoa powder
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1โ2 tbsp maple syrup (only as needed)
- 1/3 cup candy-coated chocolate chips
Instructions
- Blend until a sticky dough forms. If the mixture is crumbly, add 1-2 tbsp maple syrup and blend again to improve texture and sweetness.
- Transfer the brownie dough to a bowl. Stir in the candy-coated chocolate chips.
- Using clean hands, scoop and roll the dough into bite-sized balls.
- Enjoy immediately or store in an airtight container in the refrigerator.
Notes
- If your dates are dry, soak them in warm water for 10 minutes before blending.
- Substitute almonds and walnuts with cashews or pecans for a different flavor.
- Store in the fridge for up to one week or freeze for longer shelf life.
