- 1 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/3 cup honey
- 1/4 cup unsweetened applesauce
- 1 cup grated fresh apple, packed lightly
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup dark chocolate, melted
- 1/4 cup blueberries
- 1/4 cup pomegranate seeds
- 2 tablespoons peanut butter, melted
- 1 tablespoon cacao nibs
- 1 tablespoon white sprinkles
- 1 tablespoon dried rose petals (optional)
Instructions
- Preheat oven to 350°F and lightly grease a donut pan.
- In a large bowl whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl mix eggs, honey, applesauce, grated apple, melted coconut oil, and vanilla extract until smooth.
- Fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
- Spoon the batter evenly into the donut pan, filling each cavity about three quarters full.
- Bake for 14 to 16 minutes or until a toothpick inserted comes out clean.
- Allow donuts to cool completely on a rack.
- Dip each donut into melted dark chocolate and immediately add desired toppings before the chocolate sets.
- Let the chocolate firm up, then serve and enjoy.
Notes
- Do not overmix the batter to keep the donuts soft and tender.
- Ensure donuts are completely cool before dipping in chocolate.
