Description

These healthy chicken salad puffs combine golden, flaky puff pastry with a refreshing chicken salad filling made of tender chicken, crisp celery, sweet grapes, and a light creamy dressing. They’re perfect for parties, brunches, or a light lunch option that feels both indulgent and wholesome.


Ingredients

  • 1 sheet puff pastry
  • 2 tablespoons butter
  • 1 teaspoon coarse salt
  • 3 chicken breasts
  • Salt and black pepper, to taste
  • 1/2 cup celery, finely diced
  • 1/2 cup red grapes, quartered
  • 1 tablespoon onion, finely minced
  • 1/2 to 3/4 cup mayonnaise
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon Creole seasoning mix

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheet slightly and cut into squares or circles. Place on the prepared baking sheet.
  3. Brush puff pastry pieces with melted butter and sprinkle with coarse salt.
  4. Bake for 12–15 minutes, or until golden and puffed. Remove and let cool.
  5. Meanwhile, season chicken breasts with salt and black pepper, then cook in a skillet or bake until fully cooked. Let cool and dice into small pieces.
  6. In a large bowl, combine diced chicken, celery, grapes, onion, mayonnaise, coarse salt, and Creole seasoning. Mix until evenly coated.
  7. Slice open each puff pastry and fill with a spoonful of chicken salad.
  8. Serve immediately or refrigerate until ready to enjoy.

  • For a lighter option, use Greek yogurt in place of mayonnaise.
