- 1 sheet puff pastry
- 2 tablespoons butter
- 1 teaspoon coarse salt
- 3 chicken breasts
- Salt and black pepper, to taste
- 1/2 cup celery, finely diced
- 1/2 cup red grapes, quartered
- 1 tablespoon onion, finely minced
- 1/2 to 3/4 cup mayonnaise
- 1/2 teaspoon coarse salt
- 1/2 teaspoon Creole seasoning mix
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry sheet slightly and cut into squares or circles. Place on the prepared baking sheet.
- Brush puff pastry pieces with melted butter and sprinkle with coarse salt.
- Bake for 12–15 minutes, or until golden and puffed. Remove and let cool.
- Meanwhile, season chicken breasts with salt and black pepper, then cook in a skillet or bake until fully cooked. Let cool and dice into small pieces.
- In a large bowl, combine diced chicken, celery, grapes, onion, mayonnaise, coarse salt, and Creole seasoning. Mix until evenly coated.
- Slice open each puff pastry and fill with a spoonful of chicken salad.
- Serve immediately or refrigerate until ready to enjoy.
