Description

Healthy Almond Joys are a better-for-you version of the classic candy bar, made with wholesome ingredients like shredded coconut, almonds, and dark chocolate. They’re naturally sweetened, gluten-free, and perfect for satisfying your chocolate cravings without the guilt.


Ingredients

  • 1 1/2 cups unsweetened shredded coconut
  • 1/3 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 24 whole almonds
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil (for melting chocolate)

Instructions

  1. In a mixing bowl, combine shredded coconut, melted coconut oil, honey or maple syrup, vanilla extract, and salt. Mix until fully combined.
  2. Shape the mixture into small rectangular bars or balls and place them on a parchment-lined baking sheet.
  3. Press one almond into the center of each coconut bar.
  4. Place the tray in the freezer for 20–30 minutes until firm.
  5. Melt dark chocolate chips with 1 tsp coconut oil in a heatproof bowl over a pot of simmering water or in the microwave in short intervals, stirring until smooth.
  6. Dip each coconut-almond piece into the melted chocolate, ensuring it’s fully coated.
  7. Return to the baking sheet and refrigerate until the chocolate is set.
  8. Enjoy chilled or at room temperature.

Notes

  • Store in an airtight container in the fridge for up to 2 weeks.
  • For a vegan version, use maple syrup and dairy-free dark chocolate.
  • Use roasted almonds for extra flavor and crunch.
