Description

This soothing and nourishing vegetable soup is packed with fresh ingredients to comfort your stomach and boost your health. Perfect as a light meal or a comforting dish when youโ€™re feeling under the weather. Itโ€™s flavorful, wholesome, and easy to make.

Ingredients

Scale
  • 1 onion, chopped
  • Olive oil (for sautรฉing)
  • 2 leeks, chopped
  • 2 stalks of celery, chopped
  • 1 carrot, diced
  • 1 red pepper, diced
  • 1 zucchini, diced
  • 2 potatoes, diced
  • 2 garlic cloves, minced
  • 1 chili pepper, minced (optional, for spice)
  • Water (enough to cover the vegetables)
  • Salt and pepper, to taste

Instructions

  • Sautรฉ the Aromatics:
Heat a bit of olive oil in a large pot over medium heat. Add the chopped onion and leeks, and sautรฉ until softened.
  • Cook the Vegetables:
Add the celery, carrot, red pepper, zucchini, and potatoes to the pot. Stir and cook for a few minutes.
  • Add Garlic and Chili Pepper:
Stir in the minced garlic and chili pepper (if using), cooking for another minute.
  • Simmer the Soup:
Pour in enough water to cover the vegetables. Bring to a boil, then reduce to a simmer. Let the soup simmer for 30-40 minutes, or until all the vegetables are tender.
  • Season and Serve:
Season with salt and pepper to taste. Serve hot for a comforting, healthy meal.

Notes

  • For added flavor, you can use vegetable or chicken broth instead of water.
  • This soup is versatileโ€”feel free to add your favorite vegetables or fresh herbs like parsley or thyme.
  • To make it heartier, stir in cooked rice, quinoa, or lentils before serving.
