  • 4 cups water
  • 1 cinnamon stick
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 cups milk (or almond milk for dairy-free)
  • 1 teaspoon ground cinnamon (for garnish)
  • Black food coloring (optional for spooky effect)
  • Ice cubes (for serving)

Instructions

  1. Soak the rice: In a large bowl, combine the rice, cinnamon stick, and water. Let it soak for at least 4 hours or overnight for better flavor.
  2. Blend the mixture: Remove the cinnamon stick. Transfer the rice and soaking water to a blender and blend until the rice is finely ground, about 1-2 minutes.
  3. Strain: Pour the blended mixture through a fine-mesh strainer or cheesecloth into a large pitcher, discarding the solids.
  4. Sweeten and flavor: Stir in the vanilla extract, sugar, and milk. Add a few drops of black food coloring to give the horchata a spooky look.
  5. Chill and serve: Refrigerate for at least 1 hour to chill. Stir well before serving over ice.
