Description

Hasselback Chicken is a visually impressive, flavorful dish featuring chicken breasts sliced and stuffed with ricotta, spinach, and cheddar cheese, seasoned with paprika and baked to perfection.


Ingredients

  • 2 chicken breasts
  • 1/4 cup fresh spinach (50 g)
  • 1/4 cup ricotta cheese (50 g)
  • 1/4 cup cheddar cheese (20 g)
  • 1 teaspoon paprika
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Using a sharp knife, make several horizontal slices along each chicken breast, being careful not to cut all the way through, creating a ‘hasselback’ effect.
  3. In a small bowl, mix ricotta cheese, fresh spinach, and cheddar cheese.
  4. Stuff the cheese mixture into the slices of the chicken breasts.
  5. Season the outside of the chicken with paprika, salt, and pepper.
  6. Place chicken on a baking sheet and bake for 25-30 minutes, or until the chicken is fully cooked and cheese is melted.
  7. Remove from oven and let rest for a few minutes before serving.

Notes

  • Use fresh spinach for the best flavor, or substitute with kale or arugula.
  • Ensure slices are deep enough to hold the filling but not cut through the chicken.
  • Optional: drizzle with olive oil before baking for extra moisture.
