Description
This flavor-packed one-pan dish combines spicy harissa chicken with fragrant basmati rice, sweet medjool dates, and crunchy pistachios. A simple yet bold meal inspired by Moroccan flavors!

- 3 tbsp olive oil, divided
- 1 onion, finely chopped
- Kosher salt & pepper, to taste
- 8 bone-in, skin-on chicken thighs and/or drumsticks
- 2 to 4 tbsp harissa (adjust to heat preference)
- 3 cloves garlic, minced
- 1 tbsp ground cumin (or toasted whole cumin seeds)
- 1 tsp ground coriander
- 1 cup basmati rice, rinsed (do not use brown rice)
- 1 bay leaf
- 6 medjool dates, diced
- 1 orange (zest & juice)
- 2 tbsp (or more) chopped pistachios (roasted, unsalted)
Instructions
1๏ธโฃ Preheat & Sautรฉ:
- Preheat oven to 400ยบF (200ยบC).
- In a large oven-safe skillet, heat 2 tbsp oil over high heat.
- Reduce heat to medium, add onion + pinch of salt, and sautรฉ until soft (5 min).
2๏ธโฃ Marinate Chicken:
- In a bowl, season chicken with salt & pepper.
- Add remaining 1 tbsp oil and 1 to 2 tbsp harissa (based on spice preference). Toss to coat.
3๏ธโฃ Build Flavor:
- Stir garlic into the onions and cook 1 min.
- Add spices & 1 to 2 tbsp harissa, stir to coat.
- Stir in rinsed rice, cooking 1 min until coated in spices.
- Add dates, orange zest, and orange juice.
- Pour in 1 1/3 cups water, stir in bay leaf & 1/2 tsp salt.
4๏ธโฃ Bake:
- Nestle chicken pieces over rice.
- Transfer skillet to oven and bake uncovered for 40 min, until rice is tender and chicken is cooked through.
5๏ธโฃ Finish & Serve:
- Remove from oven and scatter chopped pistachios over the top.
- Serve immediately.
