- 1 1/2 cups coconut milk
- 1 large yellow onion, thinly sliced
- 3 garlic cloves, minced
- 1 tablespoon curry powder

- 2 tablespoons vegetable oil

Instructions
- Cook the long grain white rice according to package instructions and set aside, keeping warm.
- Heat vegetable oil in a medium saucepan or skillet over medium heat.
- Add the sliced yellow onion and cook for 6 to 8 minutes until soft and lightly golden.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add curry powder, ground turmeric, and ground cumin. Stir continuously for about 30 seconds to bloom the spices.
- Pour in the coconut milk and stir well to combine. Add salt and black pepper, then bring to a gentle simmer.
- Add the hard boiled eggs, leaving some whole and halving others if desired. Spoon sauce over the eggs.
- Simmer gently for 8 to 10 minutes so the eggs absorb the flavor, avoiding a rapid boil.
- Sprinkle chopped fresh cilantro over the top and adjust seasoning if needed.
- Serve the eggs and coconut milk sauce over warm cooked rice.
