  • 1 tablespoon olive oil

  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (optional, for serving)
  • 1 tablespoon chopped fresh cilantro (optional, for garnish)

Instructions

  • Preheat the oven to 375ยฐF (190ยฐC) and lightly grease a 9ร—9-inch baking dish.
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until softened.
  • Add the minced garlic and cook for another 30 seconds.
  • Add the ground chicken to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked, about 6-8 minutes.
