Ingredients

Scale

Ground Beef:

  • 1 lb ground beef
  • 2 tbsp cumin
  • 1 1/2 tbsp garlic powder
  • 1 1/2 tbsp onion powder
  • 1 tbsp oregano
  • 1 tsp sugar
  • 1 1/2 tbsp paprika
  • 1 tbsp chili powder
  • 3 tbsp light soy sauce (see notes)

Queso Dip:

  • 16โ€“32 oz Velveeta cheese (use 16 oz for a thinner dip)
  • 5.2 oz Boursin cheese (or cream cheese)
  • 1 onion, diced
  • 1 tbsp minced garlic
  • 1 tomato, diced
  • 1 jalapeรฑo, diced (optional)
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp oregano
  • 1 tsp sugar
  • 1 tbsp lime juice

Other Ingredients:

  • Tortilla chips
  • Cilantro, for garnish

Instructions

1. Prepare the Beef:

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. In a cast-iron skillet (or oven-safe pan), cook the ground beef over medium heat, breaking up any clumps.
  3. When halfway cooked, stir in all seasonings except soy sauce and sugar.
  4. Once the beef is fully cooked, add soy sauce and sugar, stirring well. Cook for another 1-2 minutes, then turn off the heat.

2. Make the Queso Dip:

  1. To the same skillet, add Velveeta, Boursin (or cream cheese), onion, garlic, tomato, jalapeรฑo, cumin, paprika, and oregano.
  2. Transfer the skillet to the preheated oven and bake for 30-35 minutes.

3. Finish & Serve:

  1. Stir until everything is well combined, then mix in lime juice.
  2. Garnish with cilantro and serve with tortilla chips. Enjoy!

Notes

  • Cheese Choice: Velveeta gives a creamy texture, but for a more natural flavor, use shredded cheddar + cream cheese.
  • Soy Sauce Alternative: Substitute with Worcestershire sauce for a deeper umami taste.
  • Spice Level: Adjust chili powder and jalapeรฑo to taste.
