For the Grinder Salad:
- 1/3 head iceberg lettuce (6 1/2 oz / 184g), shredded
- 2 tbsp red onion, thinly sliced
- 2 pepperoncini peppers, sliced
- 1 tbsp fresh lemon juice (or red wine vinegar)
- 1/4 cup mayonnaise
- 1/2 tbsp Dijon mustard
- 1 clove garlic, minced
- 2 tbsp grated Parmesan cheese
- 1/4 tsp dried oregano

For the Grinder Sandwich:
- 4 Italian sub rolls (or focaccia)
- 12 slices provolone cheese
- 2 oz sliced deli turkey (57g)
- 2 oz sliced deli ham (57g)
- 2 oz salami (57g)
- 16 slices pepperoni
- 2 tbsp grated Parmesan cheese
- 2 medium tomatoes, thinly sliced
Instructions
Step 1: Make the Grinder Salad
- Shred the iceberg lettuce and thinly slice the red onion and pepperoncini.
- In a large bowl, mix together the lemon juice (or vinegar), mayonnaise, Dijon mustard, minced garlic, Parmesan cheese, oregano, and optional red pepper flakes or black pepper.
- Stir in the shredded lettuce, onion, and pepperoncini until well coated.
Step 2: Assemble & Broil the Sandwiches
- Preheat the broiler on high. Slice 4 sub rolls in half lengthwise and place them cut side up on a cookie sheet.
- Arrange provolone cheese slices evenly over the bread. Broil for 1-2 minutes, or until melted.
- Layer deli turkey on one side and deli ham on the other, folding slices for a deli-style look.
- Add salami and pepperoni on the turkey side, then broil again for 1-2 minutes.
Step 3: Finish & Serve
