Description

This vibrant grilled tomato salad combines smoky, juicy tomatoes with marinated feta, fresh herbs, and a zesty dressing for a Mediterranean-inspired dish. Perfect as a light summer side or a refreshing appetizer, this salad bursts with bold flavors from preserved lemon, herby harissa, and Castelvetrano olives.


Ingredients

Grilled Tomatoes

  • 6 medium tomatoes, halved lengthwise
  • 1 tsp salt
  • 3 tbsp extra-virgin olive oil, divided
  • 1/4 cup + 1 tbsp preserved lemon BBQ sauce
  • 2 cups cherry tomatoes, halved lengthwise

Marinated Feta

  • 8 oz feta cheese, cut into 1-inch cubes
  • 1/3 cup extra-virgin olive oil
  • A few fresh oregano sprigs
  • 2 tbsp finely chopped fresh chives
  • 2 garlic cloves, peeled
  • 1 tbsp herby harissa
  • 3 strips orange or lemon zest (optional)

Herb Salad

  • 1 bunch fresh flat-leaf parsley leaves (or 2 oz arugula)
  • 1/2 cup roughly chopped fresh chives
  • 15 fresh basil leaves, torn if large
  • 1/2 cup Castelvetrano olives, halved and pitted
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp preserved lemon BBQ sauce
  • 1/2 red onion, thinly sliced into half-moons

Instructions

Grill the Tomatoes

  1. Preheat a grill or grill pan over medium-high heat.
  2. Season the halved tomatoes with salt, then brush with 2 tbsp olive oil and ¼ cup preserved lemon BBQ sauce.
  3. Grill for about 3 minutes per side, until soft and lightly charred. Transfer to a cutting board, let cool, then cut each tomato into 4 uneven pieces.
  4. In a bowl, toss cherry tomatoes with the remaining 1 tbsp olive oil and 1 tbsp preserved lemon BBQ sauce.

Marinate the Feta

  1. Place the feta cubes in a glass jar or container.
  2. Drizzle with olive oil and top with oregano, chives, garlic, herby harissa, and citrus zest strips (if using).

Prepare the Herb Salad

  1. In a bowl, mix parsley (or arugula), chives, basil, and olives.
  2. Toss with olive oil and preserved lemon BBQ sauce.

Assemble the Salad

  1. Arrange the grilled tomatoes and cherry tomatoes on a serving plate.
  2. Crumble marinated feta over the tomatoes.
  3. Scatter red onion slices on top, then finish with the herb salad.
