- 2 lbs. chicken tenderloins, sliced in half (2-inch pieces)
- 1/3 cup olive oil, plus more for the pan
- 2 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 2 tbsp Italian seasoning
- 1 tbsp garlic powder
- 2 tsp onion powder
- 2 tsp granulated sugar
- 1/2 tsp liquid smoke
- 3/4 tsp salt
- 1/2 tsp black pepper
- Chick-fil-A Sauce (optional)
Instructions
- In a mason jar with a lid (or a food processor), combine all marinade ingredients and shake well to emulsify.
- Place the diced chicken into a zip-top bag and pour in the marinade. Remove excess air and refrigerate for at least 30 minutes (or up to 4 hours).
- When ready to cook, drain and discard the excess marinade.
- Heat a ridged grill pan (preferably cast iron) over medium heat for at least 5 minutes.
- Add a few tablespoons of olive oil and use a basting brush or paper towel to grease the raised ridges.
- Add the marinated chicken to the pan and cook untouched for about 4 minutes or until easily released when flipping.
- Flip and cook for another 3-4 minutes, or until the internal temperature reaches 165°F.
- Serve hot with Chick-fil-A sauce, if desired.
Notes
- For extra smokiness, add more liquid smoke to the marinade.
- You can also cook these nuggets in an air fryer at 400°F for 8-10 minutes, shaking halfway through.
