Description

Grilled Honey Mustard Chicken with Peach Salad is the perfect summer dinner. Juicy, marinated chicken is grilled to perfection and served over a fresh salad of ripe peaches, greens, and tangy vinaigrette—bursting with sweet, savory, and smoky flavors in every bite.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1/4 cup Dijon mustard
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 4 ripe peaches, sliced
  • 5 cups mixed greens (arugula, spinach, or spring mix)
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup crumbled feta or goat cheese
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Whisk together Dijon mustard, honey, olive oil, vinegar, garlic powder, salt, and pepper in a bowl.
  2. Reserve 3 tablespoons of the marinade for the salad dressing. Pour the rest over the chicken and marinate for at least 30 minutes (or up to 4 hours).
  3. Preheat grill to medium-high heat. Grill chicken for 5–6 minutes per side until fully cooked and slightly charred. Let rest, then slice.
  4. While the chicken cooks, grill the peach slices for 1–2 minutes per side until grill marks appear.
  5. Assemble the salad: toss greens, grilled peaches, red onion, cheese, and nuts. Top with sliced chicken and drizzle with reserved dressing. Serve immediately.

Notes

  • Use nectarines if peaches aren’t available.
  • Chicken can also be baked or pan-seared if grilling isn’t an option.
  • Add avocado for a creamy touch.
