- 1 1/2 lbs boneless, skinless chicken breasts
- 1/4 cup Dijon mustard
- 3 tbsp honey
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 4 ripe peaches, sliced
- 5 cups mixed greens (arugula, spinach, or spring mix)
- 1/4 cup red onion, thinly sliced
- 1/3 cup crumbled feta or goat cheese
- 1/4 cup chopped pecans or walnuts (optional)
Instructions
- Whisk together Dijon mustard, honey, olive oil, vinegar, garlic powder, salt, and pepper in a bowl.
- Reserve 3 tablespoons of the marinade for the salad dressing. Pour the rest over the chicken and marinate for at least 30 minutes (or up to 4 hours).
- Preheat grill to medium-high heat. Grill chicken for 5–6 minutes per side until fully cooked and slightly charred. Let rest, then slice.
- While the chicken cooks, grill the peach slices for 1–2 minutes per side until grill marks appear.
- Assemble the salad: toss greens, grilled peaches, red onion, cheese, and nuts. Top with sliced chicken and drizzle with reserved dressing. Serve immediately.
Notes
- Use nectarines if peaches aren’t available.
- Chicken can also be baked or pan-seared if grilling isn’t an option.
- Add avocado for a creamy touch.
- Double the marinade for extra drizzle.
