- 1/4 cup apple cider vinegar
- 3 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1 lime, juiced
- 1/2 lemon, juiced
- 1/4 cup brown sugar
- 1 1/2 teaspoons sea salt
- Ground black pepper, to taste
- 1/4 cup extra virgin olive oil
- 3 chicken breasts, sliced in half lengthwise
Instructions
- In a bowl, mix all ingredients except the olive oil.
- Slowly drizzle in the olive oil while whisking quickly until the mixture emulsifies. Reserve 1/4 cup of the marinade for drizzling over the cooked chicken.
- Place the chicken in a glass baking dish or bowl and pour the marinade over. Cover and refrigerate for at least 2 hours.
- Before grilling, let the chicken rest at room temperature for 30 minutes.
- Preheat grill to medium-high heat. Grill the chicken, turning over when it looks 3/4 cooked to achieve grill marks. Flip and cook until juices run clear.
- Drizzle reserved marinade over the chicken before serving.
Notes
- For best results, marinate the chicken overnight.
