Description

A flavorful and versatile marinade that keeps chicken juicy, tender, and delicious. Perfect for grilling, this recipe adds a tangy and slightly sweet touch to your chicken. Reserve extra marinade for drizzling over the cooked chicken for an extra punch of flavor!


Ingredients

  • 1/4 cup apple cider vinegar
  • 3 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • 1 lime, juiced
  • 1/2 lemon, juiced
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons sea salt
  • Ground black pepper, to taste
  • 1/4 cup extra virgin olive oil
  • 3 chicken breasts, sliced in half lengthwise

Instructions

  • In a bowl, mix all ingredients except the olive oil.
  • Slowly drizzle in the olive oil while whisking quickly until the mixture emulsifies. Reserve 1/4 cup of the marinade for drizzling over the cooked chicken.
  • Place the chicken in a glass baking dish or bowl and pour the marinade over. Cover and refrigerate for at least 2 hours.
  • Before grilling, let the chicken rest at room temperature for 30 minutes.
  • Preheat grill to medium-high heat. Grill the chicken, turning over when it looks 3/4 cooked to achieve grill marks. Flip and cook until juices run clear.
  • Drizzle reserved marinade over the chicken before serving.

Notes

  • For best results, marinate the chicken overnight.
  • This marinade also works well with other meats or vegetables.
  • Pair with a side of grilled vegetables or a fresh salad for a complete meal.
