Description

This Grilled Cheese Burrito is a delicious homemade version of the popular Taco Bell favorite. Packed with seasoned beef, creamy nacho cheese, crispy tortilla strips, and a golden, cheesy crust, this burrito is better than fast food! Perfect for a quick & tasty dinner.


Ingredients

For the Ground Beef:

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 tsp salt (adjust to taste)
  • 1 tsp black pepper (adjust to taste)
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 cup tomato sauce

For Assembly:

  • 4 large flour tortillas
  • 3 tbsp spicy mayo
  • 1 cup fried rice
  • 1 cup nacho cheese sauce
  • 1 cup sour cream
  • 1 cup tortilla chips

Instructions

  • Prepare the Ground Beef:

    • Heat olive oil in a large skillet over medium heat.
    • Add diced onion and sautรฉ for 5 minutes until soft.
    • Add ground beef and cook until fully browned, breaking it apart as it cooks.
    • Season with salt, black pepper, smoked paprika, and oregano. Stir to combine.
    • Pour in the tomato sauce, reduce heat, and let simmer for 5 minutes.
  • Assemble the Burritos:

    • Lay each flour tortilla flat.
    • Spread 1 tbsp spicy mayo down the center.
    • Add fried rice, nacho cheese sauce, sour cream, and tortilla chips.
    • Top with seasoned ground beef.
  • Roll and Grill:

    • Fold in the sides and roll the burrito tightly.
    • Heat a non-stick skillet over medium heat.
    • (Optional) Sprinkle shredded Mexican cheese blend on the skillet, then place the burrito seam-side down onto the cheese.
    • Grill for 2-3 minutes per side, until crispy and golden brown.
  • Serve:

    • Serve hot with extra spicy mayo on the side for dipping.
