Scale
- 1 lb. tiger prawns (or jumbo shrimp), peeled, deveined, and tails removed (about 24 prawns)
- 2 tablespoons olive oil, divided
- 1 tablespoon lemon juice
- 2 tablespoon garlic, minced
- 1 tablespoon cajun spice (or Old Bay spice)
- 1 tablespoon Italian seasoning
- 1/2 tablespoon paprika
- 1 tablespoon parsley, finely chopped
- 2 lemon wedges
Instructions
- In a bowl, mix the olive oil, lemon juice, minced garlic, Cajun spice, Italian seasoning, paprika, and chopped parsley. Stir to combine.
- Add the shrimp to the marinade, tossing to coat evenly. Let it sit for 15-30 minutes to soak up the flavors.
- Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers, making sure they are spaced evenly.
- Grill the shrimp for 2-3 minutes per side, until they turn pink and opaque, with a slight char on the edges.
- Remove the shrimp from the skewers and serve with fresh lemon wedges for squeezing over the top.
Notes
- For an extra smoky flavor, you can grill the shrimp over wood chips or charcoal.
- These shrimp skewers are perfect served with rice, a fresh salad, or grilled vegetables.
- For spicier skewers, add more Cajun spice or a pinch of cayenne pepper to the marinade.
