- 1 20-ounce bag frozen cheese tortellini, thawed
- 1 pound ground Italian sausage
- 8 ounces sliced mushrooms
- Kosher salt, to taste
- Black pepper, to taste
- Italian seasoning, to taste
- Crushed red pepper flakes, to taste
- 1 6-ounce bag mini pepperoni
- 5-6 cloves garlic, minced
- 1 24-ounce jar pasta sauce / marinara sauce
- 2 cups shredded mozzarella cheese
- Optional: garlic toast, Parmesan cheese for serving
Instructions
- Heat a large griddle or skillet over medium heat and add cooking oil.
- Add ground Italian sausage and cook until browned and fully cooked. Remove from skillet and set aside.
- In the same skillet, sauté sliced mushrooms until tender. Add minced garlic and cook until fragrant, about 1 minute.
- Add thawed tortellini to the skillet, followed by mini pepperoni, and toss to combine.
- Pour in pasta sauce / marinara and stir in cooked sausage. Season with kosher salt, black pepper, Italian seasoning, and crushed red pepper flakes to taste.
- Sprinkle shredded mozzarella evenly over the top and cover the skillet to allow the cheese to melt, about 3–5 minutes.
- Serve hot with optional garlic toast and a sprinkle of Parmesan cheese.

- Thawing tortellini beforehand ensures even heating and prevents sticking.
