Description

Griddle Pizza Tortellini is a hearty, skillet-style dish combining tender cheese tortellini, savory Italian sausage, mushrooms, pepperoni, and gooey mozzarella cheese, all cooked with rich marinara sauce. Perfect for a quick weeknight dinner or casual family meal.

  • 1 20-ounce bag frozen cheese tortellini, thawed
  • 1 pound ground Italian sausage
  • 8 ounces sliced mushrooms
  • Kosher salt, to taste
  • Black pepper, to taste
  • Italian seasoning, to taste
  • Crushed red pepper flakes, to taste
  • 1 6-ounce bag mini pepperoni
  • 5-6 cloves garlic, minced
  • 1 24-ounce jar pasta sauce / marinara sauce
  • 2 cups shredded mozzarella cheese
  • Optional: garlic toast, Parmesan cheese for serving

Instructions

  1. Heat a large griddle or skillet over medium heat and add cooking oil.
  2. Add ground Italian sausage and cook until browned and fully cooked. Remove from skillet and set aside.
  3. In the same skillet, sauté sliced mushrooms until tender. Add minced garlic and cook until fragrant, about 1 minute.
  4. Add thawed tortellini to the skillet, followed by mini pepperoni, and toss to combine.
  5. Pour in pasta sauce / marinara and stir in cooked sausage. Season with kosher salt, black pepper, Italian seasoning, and crushed red pepper flakes to taste.
  6. Sprinkle shredded mozzarella evenly over the top and cover the skillet to allow the cheese to melt, about 3–5 minutes.
  7. Serve hot with optional garlic toast and a sprinkle of Parmesan cheese.

Notes

  • Thawing tortellini beforehand ensures even heating and prevents sticking.
  • Adjust seasoning and crushed red pepper flakes according to spice preference.
  • For added flavor, garnish with fresh basil or parsley before serving.
