Description

Juicy Greek-style grilled chicken marinated in lemon, garlic, oregano, olive oil, and yogurt, then grilled to golden perfection with smoky char marks and bright Mediterranean flavor.


Ingredients

  • 4 boneless skinless chicken breast pieces, about 700 grams total
  • 3 tablespoons fresh lemon juice, from about 1 to 2 lemons
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1/2 cup plain Greek yogurt, about 120 grams
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. In a mixing bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, Greek yogurt, salt, and black pepper.
  3. Add the chicken breasts to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.
  4. Remove the chicken from the marinade and allow excess marinade to drip off.
  5. Grill the chicken for 5 to 7 minutes per side, depending on thickness, until the internal temperature reaches 74 degrees Celsius.
  6. Remove from heat and let rest for 5 minutes before slicing.
  7. Slice and serve warm.

Notes

  • Marinate up to 4 hours for deeper flavor.
  • Do not flip the chicken too often to allow grill marks to form.
  • Let the chicken rest before slicing to retain juices.
