- 4 boneless skinless chicken breast pieces, about 700 grams total
- 3 tablespoons fresh lemon juice, from about 1 to 2 lemons
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1 tablespoon dried oregano
- 1/2 cup plain Greek yogurt, about 120 grams
- 1 teaspoon salt
- 1/2 teaspoon black pepper, freshly ground
Instructions
- Preheat a grill or grill pan over medium heat.
- In a mixing bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, Greek yogurt, salt, and black pepper.
- Add the chicken breasts to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.
- Remove the chicken from the marinade and allow excess marinade to drip off.
- Grill the chicken for 5 to 7 minutes per side, depending on thickness, until the internal temperature reaches 74 degrees Celsius.
- Remove from heat and let rest for 5 minutes before slicing.
- Slice and serve warm.
Notes
- Marinate up to 4 hours for deeper flavor.
- Do not flip the chicken too often to allow grill marks to form.
- Let the chicken rest before slicing to retain juices.
