Ingredients
For the Tzatziki Sauce

For the Peppers

6 red bell peppers, tops cut off and seeds removed, cut in half

1 roma tomato, chopped

1/2 cup zucchini, chopped

1 cup cooked quinoa

Instructions
For the Tzatziki Sauce:

In a bowl, combine all tzatziki sauce ingredients and mix well. Set aside for at least 10 minutes to allow the flavors to meld.
For the Peppers:

Preheat oven to 375°F (190°C). Spray a 9×13-inch casserole dish with nonstick spray and place the halved peppers in the dish.

Heat a large skillet over medium heat. Add ground turkey and cook, breaking it into small pieces, for about 3 minutes.
