- 2 pints (20 oz) cherry or grape tomatoes
- 8 oz block feta cheese
- 1/4 cup olive oil
- 3 garlic cloves, minced
- 1/2 tsp red pepper flakes (optional)
- 12 oz pasta (such as penne, farfalle, or spaghetti)
- Salt and pepper, to taste
- 1/4 cup fresh basil leaves, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, add the cherry tomatoes and place the block of feta in the center. Drizzle with olive oil, and season with minced garlic, red pepper flakes (if using), salt, and pepper. Toss the tomatoes to coat evenly.
- Bake in the oven for 30-35 minutes, until the tomatoes are blistered and the feta is soft and golden.
- While the feta and tomatoes bake, cook the pasta in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water before draining.
- Remove the baking dish from the oven. Using a spoon, mash the softened feta and tomatoes to create a creamy sauce.
- Add the cooked pasta and reserved pasta water (if needed) to the dish. Toss until well combined.
- Garnish with fresh basil, and serve warm.

- For a gluten-free version, use gluten-free pasta.
- You can add protein like grilled chicken or shrimp for a heartier meal.
- Swap cherry tomatoes with sun-dried tomatoes for a more intense flavor.
