Description

This flavorful chicken souvlaki recipe brings the vibrant taste of Greece to your table! Marinated in a delicious mixture of garlic, oregano, lemon, and olive oil, this grilled chicken is perfectly paired with homemade tzatziki sauce, fresh vegetables, and warm pita.

For the Souvlaki Marinade:

  • 10 garlic cloves, peeled
  • 2 tbsp dried oregano
  • 1 tsp dried rosemary
  • 1 tsp sweet paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 cup Private Reserve Greek extra virgin olive oil
  • 1/4 cup dry white wine
  • Juice of 1 lemon
  • 2 bay leaves

For the Chicken:

  • 2 1/2 lb organic boneless skinless chicken breast, cut into 1 1/2 inch pieces

For the Pita Fixings:

  • Greek pita bread
  • Tzatziki Sauce (made according to this recipe)
  • Sliced tomato, cucumber, onions, and Kalamata olives

Optional Sides to Serve Along:

  • Greek salad
  • Roasted garlic hummus
  • Mezze platter
  • Watermelon and cucumber salad

Instructions

  1. Prepare the marinade: In a small food processor, combine garlic, oregano, rosemary, paprika, salt, pepper, olive oil, white wine, and lemon juice (do NOT add the bay leaves yet). Pulse until well combined.
  2. Marinate the chicken: Add the chicken pieces to a large bowl, toss with the bay leaves, and pour over the marinade. Mix well to coat the chicken evenly. Cover tightly and refrigerate for at least 2 hours or overnight.
  3. Prepare the skewers: Soak 10-12 wooden skewers in water for 30-45 minutes.
  4. Prepare sides and tzatziki sauce: While the chicken is marinating, prepare the tzatziki sauce and any sides youโ€™d like to serve with your souvlaki.
  5. Grill the chicken: Thread the marinated chicken pieces onto the skewers. Heat the grill or griddle over medium-high heat, brushing the grates with oil. Grill the chicken skewers for about 5 minutes, turning to cook evenly, until the internal temperature reaches 160ยฐF (it will rise to 165ยฐF as it rests).
  6. Grill the pitas: While the chicken is resting, briefly grill the pitas to warm them.
  7. Assemble the souvlaki pitas: Spread tzatziki sauce on each pita, add the grilled chicken pieces (remove from the skewers), and top with sliced vegetables and olives.
  8. Serve: Optionally, serve with Greek salad, hummus, or a Mezze platter.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
  • This dish pairs well with a side of Greek salad or roasted vegetables.
