Description

This authentic Greek Chicken Gyros recipe brings the flavors of Greece to your kitchen! Juicy, marinated chicken is oven-roasted on a vertical spit and served with warm pita, creamy tzatziki, and fresh vegetables. Perfect for a homemade Greek dinner or a quick meal prep option.

Chicken & Marinade
  • 22.5 lbs boneless, skinless chicken thighs (1216 thighs)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 garlic cloves (pressed)
  • 1 tbsp dried oregano
  • 1/2 lemon, juiced
  • 1/2 tsp ground cumin
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
For Serving
  • 4 pita breads (or homemade Greek pita)
  • 1/2 cup tzatziki
  • 1 cup chopped cucumber
  • 1 cup halved baby tomatoes
  • 1/2 cup black olives
  • 1/2 cup crumbled feta cheese
  • 2 cups thinly sliced romaine lettuce

Instructions

Step 1: Marinate the Chicken
  1. In a bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, oregano, cumin, salt, and black pepper.
  2. Add the chicken thighs, coat them well, and marinate in the fridge for at least 1 hour (up to 24 hours for best flavor).
Step 2: Roast the Chicken
  1. Preheat oven to 400°F (200°C).
  2. Use a vertical spit or skewer the chicken onto an onion half placed on a foil-lined sheet pan. Stack the thighs tightly.
  3. Bake for 1 to 1 ½ hours, until the internal temperature reaches 165°F (75°C).
  4. Let the chicken rest for 10-15 minutes, then thinly slice or carve into strips.
Step 3: Assemble the Gyros
  1. Warm the pita bread on a dry pan or in the oven.
  2. Fill each pita with chicken slices, lettuce, cucumber, tomatoes, olives, and feta cheese.
  3. Drizzle with tzatziki sauce and serve immediately.
