Chicken & Marinade
- 2–2.5 lbs boneless, skinless chicken thighs (12–16 thighs)
- 1 tsp salt
- 1/2 tsp black pepper
- 2 garlic cloves (pressed)
- 1 tbsp dried oregano
- 1/2 lemon, juiced
- 1/2 tsp ground cumin
- 1/2 cup plain Greek yogurt
- 2 tbsp olive oil
For Serving
- 4 pita breads (or homemade Greek pita)
- 1/2 cup tzatziki
- 1 cup chopped cucumber
- 1 cup halved baby tomatoes
- 1/2 cup black olives
- 1/2 cup crumbled feta cheese
- 2 cups thinly sliced romaine lettuce
Instructions
Step 1: Marinate the Chicken
- In a bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, oregano, cumin, salt, and black pepper.
- Add the chicken thighs, coat them well, and marinate in the fridge for at least 1 hour (up to 24 hours for best flavor).
Step 2: Roast the Chicken
- Preheat oven to 400°F (200°C).
- Use a vertical spit or skewer the chicken onto an onion half placed on a foil-lined sheet pan. Stack the thighs tightly.
- Bake for 1 to 1 ½ hours, until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes, then thinly slice or carve into strips.
Step 3: Assemble the Gyros
- Warm the pita bread on a dry pan or in the oven.
- Fill each pita with chicken slices, lettuce, cucumber, tomatoes, olives, and feta cheese.
- Drizzle with tzatziki sauce and serve immediately.
