- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
For the Bowl:
- 2 cups cooked rice (white, brown, or cauliflower rice)
- 1/2 cucumber (sliced)
- 1/4 cup cherry tomatoes (halved)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup Kalamata olives (sliced)
- 1/4 cup feta cheese (crumbled)
- Fresh parsley (for garnish)
For the Tzatziki Sauce:
- 1/2 cup Greek yogurt
- 1 tablespoon cucumber (grated)
- 1 teaspoon lemon juice
- 1 clove garlic (minced)
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Marinate the chicken: In a bowl, mix olive oil, lemon juice, oregano, garlic powder, cumin, smoked paprika, salt, and pepper. Add chicken breasts and coat well. Marinate for at least 30 minutes (or overnight for more flavor).
- Cook the chicken: Preheat a grill or skillet over medium-high heat. Cook the chicken for 5-7 minutes on each side until fully cooked and golden brown. Let it rest for a few minutes before slicing into strips.
- Make the tzatziki sauce: In a small bowl, combine Greek yogurt, grated cucumber, lemon juice, garlic, olive oil, salt, and pepper. Mix until smooth.
- Assemble the bowl: Divide the cooked rice into bowls. Top with sliced chicken, cucumber, cherry tomatoes, red onion, olives, and feta cheese.
- Add the tzatziki sauce: Drizzle the homemade tzatziki sauce over the chicken and veggies. Garnish with fresh parsley before serving.
Notes
- For a lighter version, swap the rice for quinoa or use lettuce as a base for a salad-style bowl.
- You can use grilled chicken thighs for more flavor and juiciness.
- If you prefer a spicier sauce, add a pinch of red pepper flakes to the tzatziki sauce.
