Description
Greek Chicken Bites are tender, flavorful pieces of chicken breast marinated and cooked with lemon, garlic, oregano, and olive oil. Perfect as a quick appetizer or main dish with a bright, Mediterranean flair.

- 1 lb chicken breasts, cut into 1" pieces (about 2 breasts)
- 2 tablespoons extra-virgin olive oil
- Juice and zest of 1 lemon (about 2 tablespoons juice and 1 teaspoon zest)
- 2 cloves garlic, minced (about 1 teaspoon)
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup white wine or chicken broth, or water in a pinch
Instructions
- In a medium bowl, combine olive oil, lemon juice and zest, minced garlic, dried oregano, kosher salt, and black pepper.
- Add chicken pieces to the marinade and toss to coat. Let marinate for at least 15 minutes, or up to 1 hour for more flavor.
- Heat a large skillet over medium-high heat.
- Add the marinated chicken pieces and cook for 5-7 minutes, stirring occasionally, until chicken is browned and cooked through.
- Pour in the white wine, chicken broth, or water, and cook for another 2-3 minutes until the liquid reduces slightly and coats the chicken.
- Remove from heat and serve immediately. Garnish with extra oregano or lemon slices if desired.
Notes
- Marinating time can be extended up to overnight for deeper flavor.
- Use white wine for richer flavor, or chicken broth/water as a substitute.
- Serve with pita bread, rice, or a fresh salad for a complete meal.
- Can be cooked on a grill or baked if preferred.
