  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 loaf bread (French, Italian, sourdough, etc.)
  • 1 tablespoon olive oil (for toasting bread)

Instructions

  • Preheat the oven to 375ยฐF (190ยฐC).
  • Lightly grease a 9ร—6-inch rectangular pan (or use a 9ร—5-inch glass/ceramic loaf pan). Avoid using a metal pan.
  • In a medium bowl, mix marinara sauce, diced tomatoes, minced garlic, Italian seasoning, salt, and pepper.
  • Pour half of the tomato mixture into the bottom of the prepared pan.
  • Place the goat cheese log in the center, then pour the remaining tomato mixture over it.
  • Drizzle balsamic vinegar and olive oil on top.
  • Sprinkle with fresh chopped parsley.
  • Bake for 30-40 minutes, or until bubbling.
  • Serve warm with toasted bread slices.
