These Glazed Blueberry Butter Swim Biscuits are a delicious and decadent treat. Fluffy biscuits are loaded with fresh blueberries and topped with a sweet glaze, making them perfect for breakfast or dessert.

- 1 cup (148 g) blueberries, fresh or frozen, divided
- 3 tablespoons granulated sugar, divided
- 2 1/2 cups (312.5 g) all-purpose flour
- 4 teaspoons baking powder
- 2 cups (490 g) buttermilk
- 1/2 cup (1 stick / 113 g) unsalted butter, melted
- Glaze
- 1 cup (125 g) confectionersโ sugar
- 2 tablespoons whole milk
Instructions
- Preheat your oven to 400ยฐF (200ยฐC). Grease a 9ร13-inch baking dish or line it with parchment paper.
- In a small bowl, mix 1 tablespoon of the granulated sugar with the blueberries. Set aside.
- In a large mixing bowl, whisk together the flour, baking powder, and the remaining 2 tablespoons of granulated sugar.
- Add the buttermilk and melted butter to the dry ingredients and stir until just combined. Gently fold in the sugared blueberries, reserving a few for topping the biscuits later.
- Pour the biscuit dough into the prepared baking dish, spreading it evenly. Place the remaining blueberries on top of the dough.
- Bake for 25-30 minutes, or until the biscuits are golden brown on top and cooked through.
- While the biscuits are baking, prepare the glaze by whisking together the confectionersโ sugar and milk until smooth.
- Once the biscuits are done baking, remove them from the oven and immediately drizzle the glaze over the top.
- Let the biscuits cool slightly before serving. Enjoy!
Notes
- For an extra boost of flavor, you can add a teaspoon of vanilla extract to the glaze.
- If you donโt have buttermilk, you can substitute it with a mixture of regular milk and a teaspoon of vinegar or lemon juice.
