Description

These Glazed Blueberry Butter Swim Biscuits are a delicious and decadent treat. Fluffy biscuits are loaded with fresh blueberries and topped with a sweet glaze, making them perfect for breakfast or dessert.

  • 1 cup (148 g) blueberries, fresh or frozen, divided
  • 3 tablespoons granulated sugar, divided
  • 2 1/2 cups (312.5 g) all-purpose flour
  • 4 teaspoons baking powder
  • 2 cups (490 g) buttermilk
  • 1/2 cup (1 stick / 113 g) unsalted butter, melted
  • Glaze
  • 1 cup (125 g) confectionersโ€™ sugar
  • 2 tablespoons whole milk

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC). Grease a 9ร—13-inch baking dish or line it with parchment paper.
  2. In a small bowl, mix 1 tablespoon of the granulated sugar with the blueberries. Set aside.
  3. In a large mixing bowl, whisk together the flour, baking powder, and the remaining 2 tablespoons of granulated sugar.
  4. Add the buttermilk and melted butter to the dry ingredients and stir until just combined. Gently fold in the sugared blueberries, reserving a few for topping the biscuits later.
  5. Pour the biscuit dough into the prepared baking dish, spreading it evenly. Place the remaining blueberries on top of the dough.
  6. Bake for 25-30 minutes, or until the biscuits are golden brown on top and cooked through.
  7. While the biscuits are baking, prepare the glaze by whisking together the confectionersโ€™ sugar and milk until smooth.
  8. Once the biscuits are done baking, remove them from the oven and immediately drizzle the glaze over the top.
  9. Let the biscuits cool slightly before serving. Enjoy!

Notes

  • For an extra boost of flavor, you can add a teaspoon of vanilla extract to the glaze.
  • If you donโ€™t have buttermilk, you can substitute it with a mixture of regular milk and a teaspoon of vinegar or lemon juice.
