- 1 small shallot, finely chopped
- 2 cloves garlic, minced
- 1/4 cup tomato paste
- 1/2 tsp red pepper flakes (adjust to taste)
- 1/4 cup vodka (optional)
- 1/2 cup heavy cream
- 1 tbsp unsalted butter
- Salt and pepper, to taste
- 10 oz pasta (like penne or shells)
- 1/4 cup grated Parmesan cheese (plus more for serving)
- Fresh basil, for garnish (optional)
Instructions
- Cook the pasta in salted water according to package instructions. Reserve 1/2 cup of pasta water before draining.
- In a large skillet over medium heat, sauté olive oil, shallot, and garlic until soft. Stir in tomato paste and cook until it darkens and caramelizes slightly. Add red pepper flakes and vodka, stirring until the alcohol cooks off (about 2 minutes).
- Stir in heavy cream and butter. Season with salt and pepper. Add cooked pasta and a splash of pasta water, tossing to coat in the sauce. Finish with Parmesan and garnish with fresh basil if desired.

- Omit vodka for an alcohol-free version—the flavor is still rich and delicious.
