For the Cheesecake Layer:
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
For the Cake Layers:
- 1 box white cake mix
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup water
- 1 cup shredded coconut
- 1 cup chopped pecans
For the Frosting:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 1/4 cup heavy cream
- 1 tsp vanilla extract

- Extra shredded coconut
- Extra chopped pecans
Instructions
- Prepare the Cheesecake Layer:
- Preheat oven to 325ยฐF (165ยฐC). Grease and line a springform pan.
- In a mixing bowl, beat cream cheese and sugar until smooth. Add the egg and vanilla, mixing until combined.
- Pour the mixture into the prepared pan and bake for 25 minutes, or until set. Let cool completely.
- Bake the Cake Layers:
- Increase the oven temperature to 350ยฐF (175ยฐC). Grease and flour two 9-inch cake pans.
- In a large bowl, combine cake mix, eggs, oil, and water, and mix until smooth.
- Fold in the shredded coconut and chopped pecans.
- Pour batter into the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool the cakes completely.
- Assemble the Cake:
- Place one cake layer on a serving plate and spread a thin layer of frosting over it.
- Place the cooled cheesecake layer on top, followed by the second cake layer.
- Frost the entire cake with the remaining frosting, then garnish with additional coconut and pecans.
