For the Cheesecake Layer:

  • 8 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

For the Cake Layers:

  • 1 box white cake mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup shredded coconut
  • 1 cup chopped pecans

For the Frosting:

  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract

For Garnish:

  • Extra shredded coconut
  • Extra chopped pecans

Instructions

  • Prepare the Cheesecake Layer:
    • Preheat oven to 325ยฐF (165ยฐC). Grease and line a springform pan.
    • In a mixing bowl, beat cream cheese and sugar until smooth. Add the egg and vanilla, mixing until combined.
    • Pour the mixture into the prepared pan and bake for 25 minutes, or until set. Let cool completely.
  • Bake the Cake Layers:
    • Increase the oven temperature to 350ยฐF (175ยฐC). Grease and flour two 9-inch cake pans.
    • In a large bowl, combine cake mix, eggs, oil, and water, and mix until smooth.
    • Fold in the shredded coconut and chopped pecans.
    • Pour batter into the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Cool the cakes completely.
  • Assemble the Cake:
    • Place one cake layer on a serving plate and spread a thin layer of frosting over it.
    • Place the cooled cheesecake layer on top, followed by the second cake layer.
    • Frost the entire cake with the remaining frosting, then garnish with additional coconut and pecans.
