Description

Garlic Stuffed Jacket Potatoes are a rich and savory dish featuring soft russet potatoes filled with whipped cream cheese, confit garlic, and Gruyรจre cheese. Topped with herby confit butter, these are perfect for a comforting meal.


Ingredients

  • 1 Russet potato
  • 1 Sprig of rosemary
  • Flaky sea salt
  • Pepper
  • Extra Virgin Olive oil
  • 1 Head of garlic
  • The Filling:
  • 2 tbsp Whipped cream cheese
  • 3 Garlic confit cloves (see step 1 for garlic confit directions)
  • 1/3 cup Gruyere cheese
  • Salt
  • Pepper
  • The Herby Confit Butter:
  • 4 tbsp Butter
  • 2 tbsp Rosemary oil from the garlic confit
  • Remaining confit garlic (depending on how garlicky you want them)
  • 2 Sprigs of thyme
  • 1 Sprig Rosemary
  • 4 Sprigs Sage
  • 1/4 cup Finely chopped parsley

Instructions

  1. Preheat the oven to 250ยฐF. Peel garlic and add to a cocotte along with a sprig of rosemary. Add enough olive oil to cover the garlic and bake for about 2 hours or until garlic is browned and soft. Save the oil for later use in the herb confit topping.
  2. Increase the oven temperature to 400ยฐF. Add olive oil to a cocotte and poke holes in the russet potato. Drizzle with olive oil, add salt and pepper, and bake for about an hour until the potato is soft enough to cut through.
  3. While the potato is cooking, make the filling by combining cream cheese, Gruyรจre, and 3 cloves of garlic confit in a bowl. Mix until smooth.
  4. To make the herby butter, combine butter and 2 tbsp of rosemary oil (leftover from the garlic confit) in a pot. Remove stems from herbs, chop roughly, and add to the pot. Let it melt together for 2-3 minutes. Once combined, remove from heat and stir in confit garlic and chopped parsley. Season with salt and pepper.
  5. When the potato has slightly cooled, slice a 6-side star (not all the way through) and fill with the cream cheese mixture. Drizzle with the herby confit butter and top with more Gruyรจre cheese. Bake for 8 minutes at 400ยฐF, then crank your oven up to broil for another 2 minutes. Serve with more parsley for garnish. Enjoy!

  • You can adjust the amount of garlic confit depending on how garlicky you want the potatoes to be.
