- 1.5 lbs small red potatoes, quartered
- 4 cloves garlic, minced

Instructions
- Preheat oven: Preheat your oven to 400ยฐF (200ยฐC).
- Prepare potatoes: In a large bowl, toss the quartered potatoes with 2 tablespoons olive oil, half of the minced garlic, salt, pepper, and half of the Italian herbs. Spread them on a large baking sheet in a single layer.
- Prepare chicken: In the same bowl, combine the chicken pieces with the remaining olive oil, garlic, Italian herbs, and Parmesan cheese.
- Arrange on the baking sheet: Place the seasoned chicken on the baking sheet with the potatoes, keeping everything in a single layer to ensure even cooking.
- Bake: Bake for 25-30 minutes, or until the chicken is cooked through (165ยฐF/74ยฐC internal temperature) and the potatoes are tender.
- Brush with butter: In the last 5 minutes of cooking, brush the chicken and potatoes with the melted butter for added richness.
- Garnish and serve: Remove from the oven, let rest for a few minutes, and garnish with chopped fresh parsley. Serve warm.
