Shrimp:
  • 1 lb large shrimp, peeled and deveined
  • Salt and pepper, to taste
  • Olive oil, for cooking
Pomodoro Sauce:
  • 4 cloves garlic, minced
  • 4 cups diced fresh tomatoes or halved cherry tomatoes
  • 2 cups chicken or vegetable broth
  • 4 tbsp butter
  • 1/2 cup fresh basil leaves, torn
  • Salt, to taste
Pasta:
 
  • 8 oz capellini pasta (such as DeLallo brand)
  • Parmesan cheese, for topping

Instructions

  • Cook the Shrimp:

    • Heat a drizzle of olive oil in a large skillet over medium heat.
    • Add shrimp, season with salt and pepper, and cook for about 2 minutes per side, until pink and opaque.
    • Remove from the pan and set aside.
  • Prepare the Pomodoro Sauce:

    • In the same pan, add a bit more olive oil over medium-low heat.
    • Add garlic and sauté for 1-2 minutes until fragrant.
    • Stir in tomatoes and broth, simmering for about 10 minutes, until the tomatoes break down into a sauce.
    • Let the sauce thicken slightly.
  • Cook the Pasta:

    • Cook capellini pasta according to package directions.
    • Drain and set aside.
  • Finish the Sauce:

    • Stir in butter and fresh basil, letting it melt into the sauce.
    • If the sauce needs thickening, simmer on low heat for a few extra minutes.
    • Adjust seasoning with salt and pepper.

 

  • Assemble & Serve:

    • Return shrimp to the pan, stirring to coat in the sauce.
    • Serve the sauce and shrimp over capellini pasta.
    • Top with Parmesan cheese, extra basil, salt, and pepper.
