Description

These Garlic Butter Roasted Potatoes are crispy and golden on the outside while staying fluffy on the inside. Infused with a rich, aromatic garlic butter sauce, this side dish is perfect for any meal. Easy to make and packed with flavor!

Roasted Potatoes:

  • 1 lb mixed baby potatoes, rinsed and cleaned
  • 1/4 cup neutral oil
  • 1/2 tsp salt
  • 1 tbsp onion powder
  • 1 tbsp Cajun seasoning

Garlic Butter:

  • 1/2 cup butter
  • 2 tbsp olive oil
  • 1520 garlic cloves, minced
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp sugar

Instructions

rep the Potatoes:

  1. Preheat oven to 400°F (200°C).
  2. Bring a pot of water to a boil. Meanwhile, cut baby potatoes into halves or quarters if larger.
  3. Once boiling, add potatoes and cook 10-15 minutes until fork-tender. Drain and shake off excess water.

2. Season & Roast:

  1. Return potatoes to the pot and toss with neutral oil, salt, onion powder, and Cajun seasoning.
  2. Lightly oil a baking tray and spread potatoes cut side down.
  3. Roast for 25 minutes, then flip/toss and roast another 15 minutes or until golden brown and crispy.

3. Make Garlic Butter:

  1. While potatoes roast, melt butter and olive oil in a pan over medium heat.
  2. Add minced garlic and cook for 3-4 minutes, stirring often—stop just before garlic turns golden brown.
  3. Turn off heat, stir in paprika, pepper, salt, and sugar until combined.

4. Serve:

  1. Toss roasted potatoes with garlic butter or drizzle it over before serving. Enjoy!

Notes

  • For extra crispiness, let the potatoes cool slightly before tossing in garlic butter.
  • Yukon Gold or red potatoes can be substituted for baby potatoes.
  • Adjust Cajun seasoning for more or less spice.
