Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, combine milk, melted butter, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in Fruity Pebbles cereal.
- Divide the batter evenly among muffin cups, filling each about 3/4 full. Sprinkle extra cereal on top for a colorful finish.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
