- 4 large green tomatoes
- 2 eggs
- 1/2 cup milk
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup bread crumbs
- 2 teaspoons coarse kosher salt
- 1/4 teaspoon ground black pepper
- 1 quart vegetable oil for frying
Instructions
- Slice the green tomatoes into 1/2-inch thick slices and discard the ends.
- Whisk the eggs and milk together in a medium bowl.
- Scoop the flour onto a plate.
- Combine the cornmeal, bread crumbs, salt, and pepper on another plate.
- Dip each tomato slice in flour to coat.
- Then dip the floured tomatoes into the egg and milk mixture.
- Dredge the coated tomatoes in the breadcrumb mixture to fully coat.
- Heat 1/2 inch of vegetable oil in a large skillet over medium heat.
- Fry the tomatoes in batches of 4 or 5, making sure they donโt touch.
- Once browned on one side, flip and fry the other side.
- Drain on paper towels before serving.
Notes
- Use firm green tomatoes for best results.
- Donโt overcrowd the pan while frying to ensure even cooking.
- Drain thoroughly to maintain crispiness.
