Description

These Fricassee Leftover Turkey Sandwiches are the perfect way to repurpose your leftover turkey into a delicious, creamy, and comforting meal. Packed with a flavorful turkey filling, corn, green olives, and smoked gouda cheese, all nestled in soft artisan rolls, these sandwiches are perfect for lunch or dinner. Bake them to melt the cheese and create an irresistible gooey treat!


Ingredients

  • 2 tablespoons olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 3 cups shredded leftover turkey

  • 1 cup corn

  • 1/3 cup sliced green olives (optional)

  • 2/3 cups tomato sauce

  • 6 ounces cream cheese

  • 1/2 cup heavy cream

  • Salt and freshly ground pepper to taste

  • 1/3 cup chopped parsley

  • 16 Pepperidge Farm Stone Baked Artisan Rolls

  • 16 slices smoked gouda cheese (or cheese of your preference)


Instructions

  1. Preheat the oven to 400ยบF.

  2. In a large skillet, heat the olive oil over medium heat and sautรฉ the onions and garlic until fragrant and translucent.

  3. Add the shredded turkey, corn, olives (if using), and tomato sauce. Stir to combine.

  4. Stir in the cream cheese and heavy cream, cooking until the mixture is creamy and thickened, about 5 minutes. (It will continue to thicken as it cools.)

  5. Season with salt and pepper, add chopped parsley, and remove from heat to cool to room temperature.

  6. While the filling cools, cut about 1/4 inch off the extremities of each roll and discard. Pull out the interior crumb to make room for the filling.

  7. Once the filling has cooled, carefully insert a slice of cheese into each roll, then spoon the turkey mixture into the rolls, packing it tightly with the creamy turkey filling.

  8. Place the sandwiches on a baking sheet and bake for about 10 minutes or until the cheese is melted and the sandwiches are bubbly.

  9. Serve immediately, garnished with chopped parsley.


Notes

  • You can substitute the smoked gouda cheese with your preferred cheese, such as cheddar or Swiss.

  • If you want extra flavor, add a sprinkle of red pepper flakes or hot sauce to the turkey filling.
