- 1 lb Roma tomatoes, halved or quartered
- 12 oz canned petite diced tomatoes, with their juice
- 1/2 cup white onion, chopped
- 1 jalapeño pepper, roughly chopped, seeded
- 1/3 cup fresh cilantro
- 2 cloves garlic, roughly chopped
- 1 Tbsp lime juice, from 1/2 fresh lime
- 1/2 tsp chili powder
- 1 tsp ground cumin
- 2 tsp salt, adjust to taste
Instructions
- In a blender or food processor, combine the Roma tomatoes, canned tomatoes, onion, jalapeño, cilantro, garlic, lime juice, chili powder, cumin, and salt.
- Pulse the mixture until you reach your desired consistency (smooth or chunky).
- Taste and adjust the seasoning with more salt or lime juice if needed.
- Transfer the salsa to a bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled with tortilla chips or as a topping for tacos, burritos, or grilled meats.
Notes
- If you prefer a spicier salsa, leave some of the seeds in the jalapeño or add an additional jalapeño.
- For a smoother salsa, blend it longer, or for a chunkier texture, pulse it less.
