Ingredients

Units Scale
  • For the Filling:
    • 1 (8-oz.) pkg. cream cheese, softened
    • 1/4 cup powdered sugar, plus more for dusting
    • 1 1/2 tsp. vanilla extract, divided
    • 1 tsp. kosher salt, divided
  • For the French Toast:
    • 12 (1-oz.) slices of day-old white or brioche bread, crusts removed
    • 2/3 cup whole milk or half-and-half
    • 2 tbsp. granulated sugar
    • 1 tsp. ground cinnamon
    • 4 large eggs
    • Unsalted butter, for greasing
  • For Serving:
    • Maple syrup

Instructions

  • Prepare the Filling:
    • In a medium bowl, beat the cream cheese with an electric mixer on medium speed until fluffy (about 1 minute).
    • Add powdered sugar, 1/2 tsp. vanilla extract, and 1/4 tsp. salt. Beat on medium speed until combined and fluffy, scraping down the sides as needed.
  • Assemble the Sandwiches:
    • Spread 2 tbsp. of the cream cheese mixture onto half of the bread slices, spreading to the edges.
    • Top with the remaining bread slices to create sandwiches.
    • Cut each sandwich into 4 equal squares, yielding 24 small sandwiches.
  • Make the Custard:
    • In a shallow dish, whisk together the milk, granulated sugar, ground cinnamon, eggs, the remaining 1 tsp. vanilla extract, and 3/4 tsp. salt until just combined.
  • Cook the French Toast:
    • Preheat a nonstick griddle to 325°F or a large nonstick skillet over medium heat. Lightly grease with butter.
    • Dip each sandwich square into the custard, flipping quickly to coat both sides. Let excess liquid drip off before placing on the hot griddle.
    • Cook the sandwiches for 1–2 minutes per side, or until golden brown.
    • Transfer cooked squares to a plate and repeat with the remaining sandwiches.
  • Serve:
    • Dust the French toast squares with powdered sugar and serve warm with maple syrup for dipping.

Notes

  • To save time, assemble the sandwiches the night before and store them in the refrigerator, ready to dip and cook the next morning.
  • Leftovers can be refrigerated in an airtight container and reheated on a skillet or in the oven.
