Description

  • 24 chocolate sandwich cookies, crushed finely
  • 1/4 cup unsalted butter, melted
  • 8 ounces semisweet chocolate, melted
  • 1 1/2 cups heavy cream, divided
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed espresso, cooled
  • 24 ladyfinger cookies
  • 1 tablespoon unsweetened cocoa powder

Instructions

  1. Line the base of a springform pan with parchment paper.
  2. Combine crushed chocolate sandwich cookies with melted butter and mix until evenly coated.
  3. Press the mixture firmly into the base of the pan to form the crust and refrigerate for 20 minutes.
  4. Melt the semisweet chocolate gently and set aside to cool slightly.
  5. In a mixing bowl, beat eggs and granulated sugar until pale and slightly thickened.
  6. Fold the melted chocolate into the egg mixture until smooth.
  7. Whip 1 cup of heavy cream until soft peaks form, then gently fold into the chocolate mixture.
  8. Spread the chocolate silk layer evenly over the chilled crust.
  9. Quickly dip each ladyfinger into the cooled espresso and arrange in a single layer over the chocolate layer.
  10. In a separate bowl, beat mascarpone cheese, powdered sugar, vanilla extract, and remaining 1/2 cup heavy cream until smooth and fluffy.
  11. Spread the mascarpone cream evenly over the ladyfingers.
  12. Dust the top with unsweetened cocoa powder.
  13. Refrigerate for at least 4 hours, preferably overnight, before slicing and serving.
