Instructions
- Line the base of a springform pan with parchment paper.
- Combine crushed chocolate sandwich cookies with melted butter and mix until evenly coated.
- Press the mixture firmly into the base of the pan to form the crust and refrigerate for 20 minutes.
- Melt the semisweet chocolate gently and set aside to cool slightly.
- In a mixing bowl, beat eggs and granulated sugar until pale and slightly thickened.
- Fold the melted chocolate into the egg mixture until smooth.
- Whip 1 cup of heavy cream until soft peaks form, then gently fold into the chocolate mixture.
- Spread the chocolate silk layer evenly over the chilled crust.
- Quickly dip each ladyfinger into the cooled espresso and arrange in a single layer over the chocolate layer.
- In a separate bowl, beat mascarpone cheese, powdered sugar, vanilla extract, and remaining 1/2 cup heavy cream until smooth and fluffy.
- Spread the mascarpone cream evenly over the ladyfingers.
- Dust the top with unsweetened cocoa powder.
- Refrigerate for at least 4 hours, preferably overnight, before slicing and serving.
