Description

A comforting French onion–inspired Salisbury steak featuring juicy beef patties simmered in rich caramelized onion gravy and served with golden Swiss cheese toast.

  • 1/4 cup fresh parsley, minced
  • 2 tablespoons scallions, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil, divided
  • 2 cups sweet onions, sliced
  • 1 teaspoon granulated sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon tomato paste
  • 2 cups beef stock
  • 1/4 cup dry red wine
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon dried thyme leaves
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon Parmesan cheese, shredded
  • 4 slices French bread or baguette, cut diagonally
  • 2 tablespoons unsalted butter, room temperature
  • 1/2 teaspoon garlic, minced
  • Pinch of paprika
  • 1/4 cup Swiss cheese, grated

Instructions

  1. In a large bowl, gently mix ground chuck, parsley, scallions, kosher salt, black pepper, and flour until just combined.
  2. Form the mixture into oval patties.
  3. Heat 1 tablespoon olive oil in a large skillet over medium heat and brown patties on both sides. Remove and set aside.
  4. Add remaining olive oil to the skillet and cook sliced onions with sugar until softened and caramelized.
  5. Add minced garlic and tomato paste, stirring until fragrant.
  6. Pour in beef stock and red wine, then stir in kosher salt and dried thyme.
  7. Return patties to the skillet and simmer gently until cooked through and sauce thickens.
  8. Stir in fresh parsley and Parmesan cheese.
  9. For the cheese toast, preheat oven to 400°F.
  10. Mix butter with garlic and paprika, then spread on bread slices.
  11. Top with Swiss cheese and bake until melted and golden.
  12. Serve Salisbury steak topped with onion gravy alongside cheese toast.
