- 1 lb ground beef
- 1 medium onion, thinly sliced
- 1 tbsp olive oil
- 1 cup long-grain white rice
- 2 cups beef broth
- 1 (10.5 oz) can French onion soup
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp ground black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup French fried onions (optional, for topping)
Instructions
- Preheat your oven to 350ยฐF (175ยฐC).
- In a large skillet, heat olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and caramelized, about 8-10 minutes.
- Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
- Stir in the garlic powder, thyme, black pepper, beef broth, and French onion soup. Bring the mixture to a simmer and cook for 3-4 minutes to combine the flavors.
- Add the uncooked rice to the skillet, stirring to combine.
- Transfer the beef and rice mixture into a greased 9ร13-inch casserole dish.
- Cover the casserole with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese evenly over the top.
- Return the casserole to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- If using, sprinkle French fried onions on top of the casserole during the last 5 minutes of baking.
- Remove from the oven and let it sit for 5 minutes before serving.
Notes
- You can use brown rice, but adjust the cooking time and liquid accordingly.
- Try adding mushrooms or bell peppers for extra veggies.
