Description

  • 1 medium onion, thinly sliced
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 (10.5 oz) can French onion soup
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp ground black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup French fried onions (optional, for topping)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and caramelized, about 8-10 minutes.
  3. Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
  4. Stir in the garlic powder, thyme, black pepper, beef broth, and French onion soup. Bring the mixture to a simmer and cook for 3-4 minutes to combine the flavors.
  5. Add the uncooked rice to the skillet, stirring to combine.
  6. Transfer the beef and rice mixture into a greased 9ร—13-inch casserole dish.
  7. Cover the casserole with aluminum foil and bake for 30 minutes.
  8. After 30 minutes, remove the foil and sprinkle the shredded cheddar cheese evenly over the top.
  9. Return the casserole to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. If using, sprinkle French fried onions on top of the casserole during the last 5 minutes of baking.
  11. Remove from the oven and let it sit for 5 minutes before serving.
