Description

Ingredients

  • 3 large eggs, beaten

  • 1 1/2 cups granulated sugar

  • 1 cup unsweetened coconut flakes

  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 tablespoon white wine vinegar (see note)

  • 1 teaspoon vanilla

  • Pinch of salt

  • 1 9-inch pie crust (store-bought or homemade)


Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).

  2. In a medium bowl, mix the eggs, granulated sugar, coconut flakes, melted butter, white wine vinegar, vanilla, and a pinch of salt until well combined.

  3. Pour the mixture into the pie crust and place the pie on a baking sheet to catch any drips.
