Description

This Flying Dutchman Burger is a low-carb, bunless twist on the classic In-N-Out favorite! Juicy beef patties are stacked between caramelized onion โ€œbunsโ€ with melted cheese and a tangy homemade sauce. Perfect for a high-protein, keto-friendly meal thatโ€™s packed with flavor.

For the Burgers:

  • 1 lb 93% lean ground beef (7% fat)
  • Kosher salt and pepper, to taste
  • 1 tbsp olive oil
  • 4 slices cheese of choice
  • 1 large yellow onion, cut into 4 x 1/2-inch thick rounds

For the In-N-Out Sauce:

  • 1/3 cup Greek yogurt (or lite mayo)
  • 3 tbsp relish (or chopped pickles)
  • 1 tbsp sugar, honey, or agave
  • 1 tbsp white wine vinegar
  • 3 tbsp ketchup
  • 1 tsp yellow mustard

Instructions

  • Season the beef patties with salt and pepper on both sides. Let sit at room temperature.
  • Heat a large skillet over medium heat and drizzle with olive oil. Cook the onion rounds for 2-3 minutes per side until golden brown.
  • Top two onion rounds with cheese, then set aside on a plate and cover to help the cheese melt.
  • In the same skillet, cook the patties for about 3 minutes per side until golden brown. Flip and add the remaining cheese slices. Cook for 1 more minute until cheese melts.
  • Assemble the burgers:
    • Start with a grilled onion round (without cheese) as the base.
    • Add one patty (without cheese), followed by a patty with cheese.
    • Top with the cheesy onion round.
  • Make the sauce: In a small bowl, whisk together all the sauce ingredients. Refrigerate until ready to use.

Notes

  • For extra caramelization, cook the onions longer over low heat.
  • Use a cast-iron skillet for the best sear on the patties.
