For the Burgers:
- 1 lb 93% lean ground beef (7% fat)
- Kosher salt and pepper, to taste
- 1 tbsp olive oil
- 4 slices cheese of choice
- 1 large yellow onion, cut into 4 x 1/2-inch thick rounds
For the In-N-Out Sauce:

- 1/3 cup Greek yogurt (or lite mayo)
- 3 tbsp relish (or chopped pickles)
- 1 tbsp sugar, honey, or agave
- 1 tbsp white wine vinegar
- 3 tbsp ketchup
- 1 tsp yellow mustard
Instructions
- Season the beef patties with salt and pepper on both sides. Let sit at room temperature.
- Heat a large skillet over medium heat and drizzle with olive oil. Cook the onion rounds for 2-3 minutes per side until golden brown.
- Top two onion rounds with cheese, then set aside on a plate and cover to help the cheese melt.
- In the same skillet, cook the patties for about 3 minutes per side until golden brown. Flip and add the remaining cheese slices. Cook for 1 more minute until cheese melts.
- Assemble the burgers:
- Start with a grilled onion round (without cheese) as the base.
- Add one patty (without cheese), followed by a patty with cheese.
- Top with the cheesy onion round.
- Make the sauce: In a small bowl, whisk together all the sauce ingredients. Refrigerate until ready to use.

- For extra caramelization, cook the onions longer over low heat.
