Noodles & Chicken:
- 500g (1 lb) Hokkien noodles (fridge-stored preferred)
- 350g (12 oz) chicken thighs, boneless & skinless, cut into thin strips
- 2 tbsp canola oil (or vegetable, cottonseed, peanut oil)
- 2 garlic cloves, finely minced
- 8 green onions, cut into 5cm (2โ) pieces (whites & greens separated)
- 1 red bell pepper, thinly sliced
- 3 heaping cups green cabbage, cut into thin strips
Sauce:
- 2 tbsp light soy sauce
- 1 1/2 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tbsp Mirin or Chinese cooking wine
- 1 tbsp toasted sesame oil
- 1/8 tsp white pepper (or black pepper)
Optional Garnishes:
- White sesame seeds
- Sliced green onions
Instructions
1. Marinate Chicken:
- Mix all sauce ingredients in a small bowl.
- Toss chicken with 1ยฝ tbsp of the sauce and let marinate for 10 minutes.
2. Prepare Noodles:
- Follow package instructions: soak in boiling water or briefly boil.
- Drain, rinse under tap water, and set aside.
3. Stir-Fry Chicken & Veggies:
- Heat oil in a large non-stick pan or wok over high heat.
- Add chicken and stir-fry for 1 minute.
- Add garlic and white part of the green onions, cook for 1 more minute.
- Toss in bell pepper and cabbage, stir-fry for 2 minutes until cabbage is mostly wilted.
4. Add Noodles & Sauce:
- Add the noodles, green onions, and remaining sauce.
- Stir-fry for 1ยฝ-2 minutes until everything is evenly coated and the noodles turn a deep golden brown.
5. Serve & Garnish:
- Plate immediately. Sprinkle with sesame seeds and extra green onions, if desired.
