  • 1 pound lean ground beef
  • 1/2 cup chopped green onion
  • 1 (1 ounce) package taco seasoning mix, divided
  • 1 (10.5 ounce) can tomato soup (such as Campbell's)
  • 1 (10.5 ounce) can condensed nacho cheese soup (such as Campbell's Fiesta Nacho Cheese Soup)
  • 1 (10.75 ounce) can milk
  • 1 (32 ounce) package frozen bite-size potato nuggets (such as Tater Tots)
  • 1 1/2 cups shredded Mexican cheese blend

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch casserole dish with cooking spray.
  2. In a large skillet, brown the ground beef over medium heat, breaking it up as it cooks. Once browned, drain any excess fat and add the chopped green onion. Cook for another 2 minutes, until the onions soften.
  3. Add half of the taco seasoning mix to the beef mixture, then stir in the tomato soup, nacho cheese soup, and milk. Stir well to combine and bring to a simmer. Let it cook for 5 minutes, stirring occasionally.
  4. Spread the beef mixture evenly in the prepared casserole dish. Top with a layer of frozen tater tots, spreading them out evenly across the surface.
  5. Sprinkle the shredded Mexican cheese blend over the tater tots.
  6. Bake for 30-35 minutes, or until the tater tots are golden and crispy and the cheese is melted and bubbly.
  7. Let the casserole cool for a few minutes before serving.

Notes

  • For extra flavor, try adding some diced jalapeños or a handful of chopped cilantro before serving.
  • If you’d like to make it spicier, you can increase the amount of taco seasoning or add some hot sauce to the beef mixture.
