- For the topping:
- 1 cup granulated sugar
- 1/4 cup natural unsweetened cocoa powder
- 1/4 cup packed light or dark brown sugar
- Vanilla ice cream, for serving (optional)
Instructions
- Make the batter: Preheat the oven to 350ยบF and place 1 stick unsalted butter in a 9ร13-inch baking dish. Bake for 10 to 15 minutes until the butter is melted. Remove from the oven.
- Bring 3 cups of water to a boil. Meanwhile, whisk together 2 cups self-rising flour, 1 1/2 cups granulated sugar, 1/4 cup cocoa powder, and 2 teaspoons instant espresso powder in a large bowl. Add 1 cup milk and 2 teaspoons vanilla extract and stir until smooth. The batter will be thick.
- Transfer the batter into the melted butter-coated baking dish and spread evenly. Do not stir.
- Make the topping: In a medium bowl, whisk together 1 cup granulated sugar, 1/4 cup cocoa powder, and 1/4 cup packed brown sugar. Sprinkle evenly over the batter, without stirring. Pour the boiling water evenly over the batter. Do not stir.
- Bake for 30 to 35 minutes until the top is dry and crackled with a slight jiggle in the center. Let cool for 10 minutes before serving with vanilla ice cream, if desired.
Notes
- For a more intense chocolate flavor, add an extra teaspoon of espresso powder to the batter.
- This dessert can be served warm or at room temperature, but it is especially indulgent with vanilla ice cream.
