  • 1/4 cup packed light or dark brown sugar
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Make the batter: Preheat the oven to 350ยบF and place 1 stick unsalted butter in a 9ร—13-inch baking dish. Bake for 10 to 15 minutes until the butter is melted. Remove from the oven.
  2. Bring 3 cups of water to a boil. Meanwhile, whisk together 2 cups self-rising flour, 1 1/2 cups granulated sugar, 1/4 cup cocoa powder, and 2 teaspoons instant espresso powder in a large bowl. Add 1 cup milk and 2 teaspoons vanilla extract and stir until smooth. The batter will be thick.
  3. Transfer the batter into the melted butter-coated baking dish and spread evenly. Do not stir.
  4. Make the topping: In a medium bowl, whisk together 1 cup granulated sugar, 1/4 cup cocoa powder, and 1/4 cup packed brown sugar. Sprinkle evenly over the batter, without stirring. Pour the boiling water evenly over the batter. Do not stir.
  5. Bake for 30 to 35 minutes until the top is dry and crackled with a slight jiggle in the center. Let cool for 10 minutes before serving with vanilla ice cream, if desired.

Notes

  • For a more intense chocolate flavor, add an extra teaspoon of espresso powder to the batter.
  • This dessert can be served warm or at room temperature, but it is especially indulgent with vanilla ice cream.
