Description

These delicious Everything Bagel Biscuit Sandwiches combine all the classic flavors of a bagel but in a homemade biscuit form, filled with cream cheese, lox, and veggies for a delightful breakfast or brunch!


Ingredients

  • 3 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 sticks unsalted butter, cold
  • 1 cup shredded Cheddar cheese
  • 1/4 cup sliced scallions
  • 1 cup buttermilk
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons Everything Bagel Seasoning
  • For Filling:
  • 1/2 cup cream cheese
  • 2 Roma tomatoes, sliced
  • 1/2 small red onion, sliced
  • 2 Persian cucumbers, sliced
  • 4 ounces lox
  • 2 tablespoons capers

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, salt, and baking soda. Add the cold butter and work it in using a pastry blender or your fingers until coarse crumbs form. Stir in the shredded Cheddar cheese and sliced scallions.
  2. Make a well in the center and add the buttermilk. Gently stir until the dough just comes together.
  3. Transfer the dough to a lightly floured surface and knead a few times to bring it together. Roll or pat it out to about 1-inch thick. Use a 3-inch biscuit cutter to cut out the biscuits and place them on the prepared baking sheet about 2 inches apart. Rework the dough and cut out the remaining biscuits. Chill the biscuits for at least 30 minutes.
  4. Preheat the oven to 400ยฐF (200ยฐC).
  5. Brush the chilled biscuits with melted butter and top with Everything Bagel Seasoning. Bake until golden brown, about 20 to 25 minutes. Remove from the oven and let them cool.
  6. To assemble, split open the biscuits and slather each with cream cheese. Top with sliced tomatoes, onions, cucumbers, lox, and capers. Sandwich the biscuits together and serve immediately.

Notes

  • For extra crunch, toast the biscuits slightly before assembling.
  • If you prefer a more filling sandwich, add additional layers of lox or fresh herbs.
