These delicious Everything Bagel Biscuit Sandwiches combine all the classic flavors of a bagel but in a homemade biscuit form, filled with cream cheese, lox, and veggies for a delightful breakfast or brunch!

- 3 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 teaspoon baking soda
- 2 sticks unsalted butter, cold
- 1 cup shredded Cheddar cheese
- 1/4 cup sliced scallions
- 1 cup buttermilk
- 2 tablespoons unsalted butter, melted
- 3 tablespoons Everything Bagel Seasoning
- For Filling:
- 1/2 cup cream cheese
- 2 Roma tomatoes, sliced
- 1/2 small red onion, sliced
- 2 Persian cucumbers, sliced
- 4 ounces lox
- 2 tablespoons capers
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, salt, and baking soda. Add the cold butter and work it in using a pastry blender or your fingers until coarse crumbs form. Stir in the shredded Cheddar cheese and sliced scallions.
- Make a well in the center and add the buttermilk. Gently stir until the dough just comes together.
- Transfer the dough to a lightly floured surface and knead a few times to bring it together. Roll or pat it out to about 1-inch thick. Use a 3-inch biscuit cutter to cut out the biscuits and place them on the prepared baking sheet about 2 inches apart. Rework the dough and cut out the remaining biscuits. Chill the biscuits for at least 30 minutes.
- Preheat the oven to 400ยฐF (200ยฐC).
- Brush the chilled biscuits with melted butter and top with Everything Bagel Seasoning. Bake until golden brown, about 20 to 25 minutes. Remove from the oven and let them cool.
- To assemble, split open the biscuits and slather each with cream cheese. Top with sliced tomatoes, onions, cucumbers, lox, and capers. Sandwich the biscuits together and serve immediately.
Notes
- For extra crunch, toast the biscuits slightly before assembling.
- If you prefer a more filling sandwich, add additional layers of lox or fresh herbs.
