Description

These Espresso Chocolate Chip Cookies combine the rich flavor of dark chocolate with a kick of espresso for an irresistible treat. The soft and chewy cookies are perfect for coffee lovers who want a little extra depth in their dessert.


Ingredients

  • 270 g (2 1/4 cups) all-purpose flour
  • 2 teaspoon baking powder
  • 170 g (12 tablespoon) unsalted butter, room temp
  • 160 g (3/4 cup) light brown sugar
  • 100 g (1/2 cup) granulated sugar
  • 24 g (1/4 cup) espresso powder
  • 1 teaspoon kosher salt
  • 1 large egg, room temp
  • 1 teaspoon vanilla extract
  • 113 g (4 oz) dark chocolate, + more for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together the flour and baking powder. Set aside.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Mix in the espresso powder, salt, egg, and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dark chocolate pieces (and additional chocolate if desired). Be sure not to overmix the dough.
  7. Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers are set. The cookies will continue to cook slightly after they are removed from the oven.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer coffee flavor, you can increase the espresso powder by 1 tablespoon.
  • If you like a more gooey texture, slightly underbake the cookies and let them set on the baking sheet.
  • These cookies pair perfectly with a cup of coffee or milk!
